AMAZING LOW CARB PIZZA
Ingredients
- 4 large eggs
- 3 c. shredded mozzarella
- 1/4 c. freshly grated Parmesan/cheddar or cheese you prefer
- Sea salt
- Freshly ground black pepper, red chilli flakes
- 1/2 c. pizza sauce (make with tomatoes, oregano, onions, garlic)
- 1/4 c. pepperoni (optional)
- 1/4 c. thinly sliced mushrooms
- 2 tbsp. thinly sliced black olives
- Fresh basil leaves, chopped
Instructions
- Preheat oven to 425°. Grease glass pan or baking sheet. Mix together eggs, 2 cups mozzarella, and parmesan. Season with salt and pepper, and spread mixture evenly on baking sheet.
- Bake until lightly golden, about 12 to 15 minutes. Spread pizza sauce on top. Sprinkle remaining mozzarella, pepperoni, mushrooms, and olives. Sprinkle oregano and chilli flakes if you wish.
- Bake until cheese is melted about 15 minutes. Sprinkle with basil. Cut slices and serve.
