CINNAMON FLAX MUFFINS
Ingredients
Muffins:
- 1 cup ground flax seeds
- 1 Tbsp. ground cinnamon
- 1/2 Tbsp. baking powder
- 1/4 tsp. fine sea salt
- 3 medium eggs
- 1/4 cup water, at room temperature
- 1/6 cup butter or warm coconut oil
- 1 tsp. vanilla extract
- 1/2 tsp. stevia or sweetener of choice
Icing:
- 1/4 cup cashew butter
- 1/4 cup coconut oil
- 1/4 tsp. vanilla extract
- 1/4 tsp cacao powder
- Cinnamon powder to dust
- Sweetener of choice if needed
Instructions
- Mix ground flax seeds with cinnamon, baking powder, and salt.
- Blend eggs, water, oil, vanilla, and sweetener for 30 seconds.
- Mix the dry and liquid mixtures gently and let sit for 3 minutes.
- Pour batter into prepared muffin pan and bake at 350° F for 12-14 minutes, till a toothpick inserted comes out clean.
- Immediately take the muffins out and cool for half an hour before drizzling icing on each.
- Cashew butter icing: gently mix cashew butter and coconut oil in a bowl and add sweetener, vanilla and cacao. Add cinnamon powder and a dash of orange essential oil.
- Spread icing over muffins and enjoy!
