CINNAMON FLAX MUFFINS 

 Ingredients

 Muffins:

  • 1 cup ground flax seeds
  • 1 Tbsp. ground cinnamon
  • 1/2 Tbsp. baking powder
  • 1/4 tsp. fine sea salt
  • 3 medium eggs
  • 1/4 cup water, at room temperature
  • 1/6 cup butter or warm coconut oil
  • 1 tsp. vanilla extract
  • 1/2 tsp. stevia or sweetener of choice

Icing:

  • 1/4 cup cashew butter
  • 1/4 cup coconut oil
  • 1/4 tsp. vanilla extract
  • 1/4 tsp cacao powder
  • Cinnamon powder to dust
  • Sweetener of choice if needed

Instructions

  1. Mix ground flax seeds with cinnamon, baking powder, and salt.
  2. Blend eggs, water, oil, vanilla, and sweetener for 30 seconds.
  3. Mix the dry and liquid mixtures gently and let sit for 3 minutes.
  4. Pour batter into prepared muffin pan and bake at 350° F for 12-14 minutes, till a toothpick inserted comes out clean.
  5. Immediately take the muffins out and cool for half an hour before drizzling icing on each.
  6. Cashew butter icing: gently mix cashew butter and coconut oil in a bowl and add sweetener, vanilla and cacao. Add cinnamon powder and a dash of orange essential oil.
  7. Spread icing over muffins and enjoy!
